In my vegetable garden I grow New Zealand spinach or Warrigal greens. Recently I used them to make packages of goat's cheese in puff pastry. You simply take a sheet of ready made puff pastry and put the cooked greens on it, and top this off with a small round goat's cheese. You may wish to add some curry powder or pepper and fold the pastry over the cheese. This worked out very well. I now wonder whether this vegetable can be used as a replacement for ordinary spinach in italian cuisine. Has anyone had any experience with this vegetable?
